To all my Canadian readers…a very happy Thanksgiving to you!
This weekend I celebrated with my Canadian friend who hosted his very first Thanksgiving. I was given pumpkin pie duties & whilst the initial pastry mixing was an absolute NIGHTMARE, the end result was worth it to see some happy Canadians tucking into it
Below is the pie I made using a recipe from the Hummingbird Bakery Cook Book:

If anyone can tell me what I need to do when pastry fails to combine properly I would very much appreciate it. I found mine to be a bit crumbly & a terror to roll!

My ex-boyfriend had the same problem with his pie dough, but we haven’t had with ours, so I’ll just tell you how we do it: we go easy on the flour.
It might not be what went wrong in your case, but this is what makes the dough behave as you described in my ex’s case. He’s notorious for going overboard with some ingredients :facepalm: .
If that’s what happened, I’d suggest adding milk to the dough very, very carefully.

Thanks so much for your advice! First time I attempted making pastry & what an ordeal. Thought it might have been the flour but there was so much butter involved I thought it would have held it all together….gah!
